Ingredients
For the grill:
- 4 ears corn (Sunshine Sweet preferred)
- 2 limes (halved for extra juice)
- 1.5 tbsp avocado oil
For the salsa:
- 1 cup tomatoes (diced into 1/2-inch cubes)
- 1/2 red onion (finely diced)
- 1/3 cup cilantro (finely chopped)
- 1 jalapeño (seeded and minced)
- 2 garlic cloves (freshly minced)
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1.25 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- 1/2 tsp honey
Step 1: Prepare Ingredients and Heat Grill
- 1 cup tomatoes
- 1/2 red onion
- 1 jalapeño
- 2 garlic cloves
- 1/3 cup cilantro
- 2 limes
While preheating your grill to 400°F-450°F, prepare your mise en place: dice the tomatoes into ½-inch cubes, finely dice the red onion, mince the jalapeño (remove seeds for less heat), mince the garlic, and finely chop the cilantro.

Pour this dressing over the corn mixture and gently fold everything together until evenly combined, being careful not to crush the corn kernels or tomatoes.
