Why You’ll Love This Cajun White Chicken Chili

  • Ready in under 30 minutes – This chili comes together fast, making it perfect for busy weeknights when you need dinner on the table quickly.
  • Creamy and comforting – The combination of half-and-half and pepper jack cheese creates a rich, satisfying texture that’s different from your typical tomato-based chili.
  • Packed with protein – With chicken, sausage, and beans, this hearty chili keeps you full and satisfied without feeling heavy.
  • Bold Cajun flavor – The cajun seasoning, green chilies, and pepper jack cheese give this chili a nice kick that warms you up from the inside out.
  • One-pot meal – Everything cooks in a single pot, which means less cleanup and more time to relax after dinner.

What Kind of Chicken Should I Use?

For this chili, you have plenty of options when it comes to chicken. Rotisserie chicken from the store is probably the easiest route – just shred it up and you’re good to go. If you want to cook your own, boneless skinless chicken breasts or thighs both work great, though thighs will give you a bit more flavor and stay juicier in the chili. You can poach, bake, or even use leftover grilled chicken if that’s what you have on hand. The beauty of this recipe is that it’s pretty forgiving, so whatever cooked chicken you have available will work just fine.

Options for Substitutions

This chili is pretty forgiving when it comes to swapping ingredients:

  • Half-and-half: You can use heavy cream for a richer chili or whole milk for a lighter version. If using milk, add it at the end of cooking to prevent curdling.
  • Sausage: Andouille sausage is traditional for Cajun dishes, but smoked sausage, kielbasa, or even ground turkey sausage work well. If you want less heat, go with a mild Italian sausage.
  • Red beans: Great Northern beans, cannellini beans, or navy beans are all good swaps. You can also use a mix of beans for variety.
  • Pepper jack cheese: Monterey jack, white cheddar, or a Mexican cheese blend all melt nicely. If you want less spice, stick with regular Monterey jack.
  • Green chilies: Fresh roasted poblanos or jalapeños work great if you have them. Just dice them up and adjust the amount based on your heat preference.
  • Butter and flour roux: If you’re avoiding gluten, skip the roux and use cornstarch mixed with cold water to thicken at the end instead.
  • Onion flakes: Fresh onion is always better if you have it – use about 1/2 cup diced yellow or white onion, sautéed until soft.

Watch Out for These Mistakes While Cooking

The biggest mistake when making this chili is rushing the roux – that butter and flour mixture needs the full 2 minutes of cooking to get rid of the raw flour taste, so don’t skip this step even though it seems quick.

Another common error is adding the cheese while the chili is still at a rolling boil, which can cause it to separate and become grainy instead of creamy, so turn the heat to low before stirring in that pepper jack.

To avoid a watery chili, make sure to drain your canned beans and corn well before adding them, and if you want extra depth of flavor, brown your sausage separately first instead of just tossing it in raw.

Finally, give the chili a good stir every few minutes during that final 10-15 minute simmer to prevent the bottom from scorching, especially once the cheese is added.

What to Serve With Cajun White Chicken Chili?

This hearty chili is perfect with a big pan of cornbread or some warm flour tortillas on the side for scooping. I love setting out a toppings bar with sour cream, extra shredded cheese, sliced green onions, and crushed tortilla chips so everyone can customize their bowl. If you want to balance out the richness and spice, a simple side salad with ranch dressing or some cool cucumber slices works great. For a more filling meal, serve it over white rice or with some buttery crackers for dipping into all that creamy, spicy goodness.

Storage Instructions

Store: This chili actually tastes even better the next day once all the flavors have had time to mingle! Keep it in an airtight container in the fridge for up to 4 days. It’s one of those recipes that’s perfect for meal prep since you can portion it out for easy lunches throughout the week.

Freeze: You can definitely freeze this chili for up to 3 months in freezer-safe containers or bags. Just know that the dairy might separate a bit when you thaw it, but a good stir while reheating usually brings it back together nicely.

Reheat: Warm it up on the stovetop over medium-low heat, stirring occasionally until heated through. You can also microwave individual portions, but I like to do it on medium power and stir halfway through so it heats evenly. If it seems too thick after storing, just add a splash of chicken broth to loosen it up.

Estimated Nutrition

Estimated nutrition for the whole recipe (without optional ingredients):

  • Calories: 3700-4100
  • Protein: 210-240 g
  • Fat: 200-230 g
  • Carbohydrates: 200-230 g

Ingredients

For the base:

  • 3 tbsp butter (I like Kerrygold unsalted butter for this)
  • 3 tbsp flour (I always use King Arthur all-purpose flour)
  • 3 cups chicken broth
  • 1 cup half-and-half (room temperature, about 70°F)

For the chili:

  • 3 cups chicken (shredded or cut into 1/2-inch pieces)
  • 1 lb sausage (sliced into 1/4-inch rounds)
  • 30 oz red beans (drained and rinsed well)
  • 11 oz corn
  • 8 oz green chilies
  • 2 tbsp onion flakes
  • 1/4 tsp garlic powder
  • 2 tsp cumin
  • 1 1/2 tsp chili powder
  • 2 tbsp cajun seasoning (I use Slap Ya Mama for best flavor)
  • 1/2 tsp smoked paprika
  • 2 cups pepper jack cheese (freshly shredded for better melting)

Step 1: Brown the Sausage and Build Flavor

  • 1 lb sausage

In a large pot or Dutch oven over medium-high heat, brown the sliced sausage until it has a golden crust and has rendered some of its fat, about 5-7 minutes.

This step builds the foundation of flavor for your chili.

Remove the sausage with a slotted spoon and set aside, leaving about 1 tablespoon of the rendered fat in the pot—this will enhance the roux and add authentic Cajun depth.

Step 2: Create the Roux Base

  • 3 tbsp butter
  • 3 tbsp flour

Reduce heat to medium and add the butter to the pot with the remaining sausage fat.

Once melted, whisk in the flour to create a paste and cook for 2 minutes, stirring constantly to eliminate the raw flour taste.

The roux should smell toasty and fragrant—this is your thickening base and flavor foundation.

I like to use Kerrygold butter here because its higher fat content creates a more flavorful, stable roux.

Step 3: Build the Creamy Base and Thicken

  • 3 cups chicken broth
  • 1 cup half-and-half

Slowly whisk in the chicken broth to avoid lumps, then gradually add the room-temperature half-and-half while stirring constantly.

Increase heat to medium-high and bring to a gentle boil, stirring frequently, until the mixture thickens enough to coat the back of a spoon, about 2-3 minutes.

The gradual addition of the cold cream helps prevent the sauce from breaking and ensures a silky texture.

Step 4: Season and Layer the Aromatics

  • 2 tbsp onion flakes
  • 1/4 tsp garlic powder
  • 2 tsp cumin
  • 1 1/2 tsp chili powder
  • 2 tbsp cajun seasoning
  • 1/2 tsp smoked paprika

Reduce heat to medium and add all the Cajun seasonings: onion flakes, garlic powder, cumin, chili powder, Cajun seasoning, and smoked paprika.

Stir well to distribute the spices evenly throughout the creamy base.

Let this cook for 1 minute so the spices bloom and release their flavors into the sauce.

I find that letting the seasonings cook briefly in the hot cream intensifies their flavor rather than just stirring them in cold.

Step 5: Add Proteins, Vegetables, and Green Chilies

  • cooked sausage from Step 1
  • 3 cups chicken
  • 30 oz red beans
  • 11 oz corn
  • 8 oz green chilies

Stir in the cooked sausage from Step 1, followed by the shredded chicken, drained and rinsed red beans, corn, and green chilies.

Mix thoroughly to ensure all ingredients are evenly distributed and coated with the seasoned cream sauce.

Simmer over medium heat for 10-12 minutes, stirring occasionally, to allow the flavors to meld and the chili to reach a gentle simmer without boiling hard.

Step 6: Finish with Cheese and Serve

  • 2 cups pepper jack cheese

Remove from heat and stir in the freshly shredded pepper jack cheese until completely melted and incorporated, about 1-2 minutes.

The residual heat will melt the cheese smoothly without any risk of the cream breaking.

Taste and adjust seasonings if needed, then ladle into bowls and serve immediately.

I always use freshly shredded cheese rather than pre-shredded because it melts into a creamier sauce without the anti-caking agents.

This meal is really good. It really is. However, this recipe has over 11,000mg of sodium. That’s including using low sodium chicken broth. Now doing the math the best solution would be to use chicken bone broth and a regular Cajun seasoning. Not “slap ya mama”. Had I realized this before making it I would have changed ingredients. It is obviously way over salty as the recipe stands.
