Ingredients

For the chicken:

  • 1.25 tbsp soy sauce
  • 1.5 tbsp sesame oil
  • 2 garlic cloves (freshly minced)
  • 3 cups chicken (cooked and shredded)
  • 1 tbsp fresh lime juice

For the assembly:

  • 16 oz cream cheese (softened to room temperature)
  • 1 cup Sweet Thai chili sauce
  • 2 cups spinach (finely shredded)
  • 1/2 cup chives or green onions (chopped)
  • 2/3 cup peanuts (roughly chopped)
  • 1/4 cup fresh cilantro (chopped)

For serving:

  • Rice crackers

Instructions

  • Mince the garlic cloves finely and chop the chives, cilantro, and peanuts. Shred the spinach into thin ribbons. Ensure your cream cheese is at room temperature so it spreads easily. Have the cooked, shredded chicken ready and measure out all remaining ingredients. Proper prep prevents scrambling during assembly and ensures smooth, even flavors throughout the dip.
  • In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, and fresh lime juice. Pour this mixture over the shredded chicken and toss thoroughly to coat every strand evenly. Let sit for 2-3 minutes so the flavors can penetrate the chicken—this creates depth rather than having the flavors sit on top of a cream cheese base.
  • Spread the softened cream cheese evenly across a serving plate or shallow bowl, creating a smooth, even layer as your base. I like to use the back of a spoon to make gentle swirls in the cream cheese—it looks beautiful and helps the toppings nestle in slightly. This foundation will hold all your toppings together while remaining creamy.
  • Pour the sweet Thai chili sauce over the cream cheese base, then arrange the seasoned chicken from Step 2, shredded spinach, chopped chives, and peanuts in distinct sections or scattered layers across the top. Sprinkle with fresh cilantro as the final garnish. I find arranging toppings in sections makes the dip look restaurant-quality and lets guests choose their favorite flavor combinations with each bite.
  • Serve the dip at room temperature or slightly chilled alongside rice crackers for dipping. The contrast between the cool, creamy base and the warm, crispy crackers creates an excellent textural experience.
