Ingredients
  

For the dressing

  • 3 lemons (sliced into thin rings and juiced)
  • 1/3 cup olive oil (I prefer Lucini Premium Select for its peppery finish)
  • 1 1/4 tsp chili flakes (Urfa biber preferred)
  • 1/2 tsp salt
  • 1/4 tsp honey
  • pepper to taste

For the salad

  • 2 large cucumbers (smashed then cut into 2-inch chunks)
  • 2 shallots (thinly shaved into rings)
  • 1/2 cup parsley (loosely packed)
  • 1/4 cup fresh mint leaves (torn)
  • 2/3 cup feta cheese (I always use President Feta for its creamy texture)

Instructions
 

  • Slice 2 of the lemons into thin rings and set aside. Juice the third lemon into a small bowl and reserve the juice. Thinly shave the shallots into rings, loosely pack the parsley, and tear the mint leaves. Smash the 2 large cucumbers with a mallet or the side of a knife to break them open and increase surface area, then cut them into 2-inch chunks. This preparation ensures everything is ready when you need it and allows the cucumber pieces to absorb flavors more effectively.
  • Heat 1/3 cup olive oil in a shallow pan over medium-high heat until it shimmers, about 1-2 minutes. Carefully add the lemon slices in a single layer and fry for 3-5 minutes until they turn golden and the edges begin to char slightly. The heat caramelizes the lemon's natural sugars and mellows the tartness while creating a subtle bitterness that balances the salad beautifully. Transfer the fried lemons to a plate and let the oil cool for a few minutes before using—this prevents the delicate herbs from wilting when you combine everything.
  • Once the fried lemon slices have cooled slightly, roughly chop them into bite-sized pieces, discarding any seeds. In a small bowl, whisk together the reserved lemon juice, cooled infused oil from the pan, chili flakes, salt, honey, and pepper to taste. I find that the honey balances the heat from the chili flakes and adds subtle sweetness that complements the fresh herbs without making the dressing cloying. Taste and adjust the seasoning—you want a bright, spicy, and tangy dressing that will coat all the vegetables.
  • In a large bowl, combine the smashed cucumber chunks, shallot rings from Step 1, chopped fried lemons, parsley, and torn mint. Pour the dressing over the vegetables and herbs, then gently fold everything together until evenly coated. Finally, crumble the feta cheese over the top and give it a gentle final toss—I add the feta last so its creamy texture doesn't get crushed into the dressing. Serve immediately while the salad is still fresh and the cucumber maintains its crisp texture.
