Combine the chopped dates, honey, chia seeds, ground flax seeds, and salt in a food processor. Pulse until the mixture is smooth and sticks together. If the mixture seems too thick to stir, add another tablespoon or two of honey to help blend everything smoothly.
Transfer the blended date mixture to a large bowl. Add the old-fashioned oats, finely chopped pistachios, dried cranberries, and white chocolate chips. Stir everything together until evenly mixed. I like to use the optional white chocolate chips for extra sweetness and texture.
Cover the bowl and refrigerate the mixture for at least 30 minutes. This makes the mixture easier to shape and helps everything hold together better.
Once the mixture is chilled, use a spoon or cookie scoop to form it into balls about 1 inch in diameter. Alternatively, press the mixture evenly into a parchment-lined baking pan to make bars, then slice into portions once set. For a quick boost of flavor, I sometimes sprinkle a tiny bit of extra chopped pistachios on top before pressing into the pan.
