Season the chicken pieces generously with kosher salt and black pepper on all sides—this helps develop a flavorful crust when seared. Mince the garlic cloves fresh to release their aromatic oils, mince the shallot, slice the peaches into 1/2-inch wedges, and julienne the fresh basil. Having everything prepped before you start cooking ensures smooth workflow and prevents overcooking any component.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat until it shimmers. Working in batches if necessary to avoid crowding the pan, sear the seasoned chicken chunks for 5 minutes per side until they develop a golden-brown crust. This browning creates depth of flavor through the Maillard reaction. Transfer the seared chicken to a clean plate and set aside.
  • In the same skillet, melt the butter over medium heat and add the minced shallot.
