Finely mince the fresh parsley into about 1/8-inch pieces—this size matters because larger pieces can feel stringy, while finer pieces distribute evenly throughout the dip. In a medium bowl, combine the yogurt with the minced parsley, dill, apple cider vinegar, garlic powder, onion powder, salt, and oregano. Stir well until all ingredients are fully incorporated and the color is evenly distributed throughout. The dip should look vibrant green with flecks of herbs visible.
Drizzle the extra virgin olive oil over the surface of the dip and gently swirl it in with a spoon—I prefer to leave a little visible oil on top as it adds a luxurious finish and helps preserve freshness. Taste the dip and adjust the seasoning by adding freshly ground black pepper to your liking. If you find it needs more tang, add another teaspoon of vinegar, or if it needs more savory depth, add a bit more garlic powder.
Transfer the dip to a serving bowl and refrigerate for at least 4 hours, though 8 hours is ideal—this resting time allows the flavors to meld and deepen significantly. The dip will also thicken slightly as it chills. Serve directly from the refrigerator with fresh vegetables (carrots, cucumbers, bell peppers, cherry tomatoes) or crispy pita chips on the side.
