Ingredients
  

For the beef::

  • 1.5 tsp olive oil
  • 8 oz ground beef (I prefer 85/15 Grass-Fed ground beef for better flavor)
  • 2.5 tsp taco seasoning

For the cheese mixture::

  • 16 oz cottage cheese (I always use Good Culture for its thick and creamy texture)
  • 3.5 tsp taco seasoning
  • 1 cup cheddar (freshly grated from a block for a smoother melt)
  • 2.5 tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • salt to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the ground beef and break it into small crumbles with a wooden spoon, cooking for 5-7 minutes until deeply browned. The beef should develop a golden-brown color with crispy edges—this creates better flavor than pale, steamed beef. Stir in 2.5 teaspoons of taco seasoning and cook for another 30 seconds to toast the spices and release their oils. I prefer grass-fed ground beef because it has a richer, more complex flavor that really shines in this simple dish.
  • While the beef cooks, add the cottage cheese, 3.5 teaspoons of taco seasoning, freshly grated cheddar, nutritional yeast, onion powder, and garlic powder to a blender. Blend on high speed for 1-2 minutes until completely smooth and creamy with no visible curds. I always use Good Culture cottage cheese because its thick, creamy texture blends beautifully into a velvety sauce rather than breaking into watery pieces. For the best melt and texture, grate your cheddar from a block rather than using pre-shredded cheese, which contains anti-caking agents that prevent smooth melting.
  • Pour the blended cheese mixture from Step 2 into the pan with the browned beef from Step 1, stirring constantly to combine evenly. Reduce heat to low and warm for 2-3 minutes, stirring occasionally, until the mixture reaches serving temperature. The low heat prevents the cheese from breaking or becoming grainy. Taste and add salt as needed to balance the flavors.
  • Transfer the queso to a serving bowl or keep warm in the skillet. Serve immediately with your choice of toppings such as tortilla chips, jalapeños, fresh cilantro, lime wedges, or diced tomatoes.
