Ingredients
  

For the tomato sauce:

  • 1 can (28 oz) whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar
  • 1 tsp dried oregano
  • salt and black pepper, to taste

For assembling the mini pizzas:

  • 3 flour tortillas (10-inch each)
  • 2 tsp olive oil
  • 4 slices mozzarella cheese
  • 1 slice cheddar cheese
  • 4 large black olives
  • 1/4 cup pizza sauce
  • 2 tbsp shredded mozzarella cheese

Instructions
 

  • Place the drained whole tomatoes in the bowl of a food processor fitted with a steel blade. Add the minced garlic, 1 tablespoon olive oil, white wine vinegar, and dried oregano. Process until the mixture is smooth, which should take about 30 seconds. Season the sauce to taste with salt and freshly ground black pepper. This will yield about 2 cups of tomato sauce, which you’ll use for the pizzas. I like to taste the sauce and adjust the seasoning—sometimes I add a little extra vinegar if I want a tangier flavor.
  • Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with non-stick aluminum foil. Cut six 4 1/2 to 5-inch circles from the flour tortillas. Brush both sides of each tortilla circle with olive oil (about 2 teaspoons total). Heat a skillet over medium heat and cook the tortilla circles until golden brown on both sides, about 2 to 3 minutes per side. Once browned, transfer the tortillas to the prepared baking sheet.
  • Cut three baby ghosts from one slice of mozzarella cheese, a friendly ghost from another slice, and use an egg-shaped cookie cutter to cut a Pac Man ghost from another. For the Pac Man ghost, use kitchen shears to create a zigzag pattern at the bottom. Cut thin mozzarella strips from another slice for the mummy pizza, and cut a Jack O'Lantern shape from the cheddar cheese. Create spooky spiders and decorations by halving and slicing black olives as needed for legs, eyes, and mouths. Cut small eyes and mouths from mozzarella scraps and black olives for the ghosts and Jack O'Lantern. This is a fun and creative step—I like to involve kids here!
  • Spread 2 teaspoons of prepared pizza sauce on each browned tortilla crust. On one crust, sprinkle 2 tablespoons of shredded mozzarella cheese for the spider pizza. Leave the other crusts with just the pizza sauce, as they will be topped with cheese shapes after an initial bake. Place the prepared pizzas on the lined baking sheet and bake in a preheated 400°F oven for 6 minutes.
  • Remove the pizzas from the oven. Arrange the spooky spider (made from olives) on the pizza topped with shredded mozzarella. Place the various cheese and olive decorations on the other pizzas as desired: baby and friendly ghost shapes, Pac Man ghost, mummy stripes with olive eyes, and the Jack O'Lantern. Return the decorated pizzas to the oven for 1 to 2 minutes, just until the cheese starts to melt. For an extra festive look, I sometimes sprinkle a tiny bit of dried oregano over the tops before the final bake.
