Ingredients
  

For the stroganoff:

  • 1 small onion (diced)
  • 2 tbsp parsley (fresh, finely chopped)
  • 3 garlic cloves (minced)
  • 2 tbsp butter (I prefer Kerrygold for richness)
  • salt to taste
  • 1 tsp paprika (Hungarian if possible)
  • 1 tbsp Worcestershire sauce
  • 1/2 cup sour cream (add off heat to prevent curdling)
  • black pepper to taste
  • 1 lb ground turkey (room temperature)
  • 1 tbsp olive oil
  • 7 oz baby bella mushrooms (sliced)
  • 2 tbsp all-purpose flour (I use King Arthur)
  • 1.5 cups chicken broth

For serving:

  • 12 oz egg noodles (cooked until al dente)

  • Begin by dicing the onion and finely chopping the parsley. Mince the garlic cloves and slice the baby bella mushrooms. In a separate bowl, whisk together the chicken broth and all-purpose flour until no lumps remain; this slurry will thicken our sauce. Start cooking your egg noodles according to package directions, aiming for al dente, so they are ready when the sauce is complete. I always prep all my ingredients before I start cooking to make the process smoother and more enjoyable.
  • In a large skillet or Dutch oven over medium heat, melt the butter. Add the diced onions and sliced mushrooms, sautéing for 7-10 minutes until they soften and release their moisture, developing a nice golden color. Remove them from the pan and set aside. This step builds the first layer of flavor for our stroganoff, allowing the vegetables to caramelize slightly.
  • Add the olive oil to the same skillet over medium-high heat. Once shimmering, add the room temperature ground turkey and break it apart with a spoon. Season generously with salt and black pepper and cook for 5-8 minutes, browning the turkey thoroughly. Drain any excess fat if needed. Then, stir in the minced garlic and Hungarian paprika, cooking for just 30 seconds more until fragrant; blooming the spices in the hot oil really enhances their flavor.
  • Pour the chicken broth and flour slurry into the pan with the turkey, stirring constantly to prevent lumps. Return the sautéed onions and mushrooms to the pan. Add the Worcestershire sauce. Bring the mixture to a gentle simmer, stirring occasionally, and let it cook for about 3 minutes, allowing the sauce to thicken and the flavors to meld. I like to add a pinch more salt and pepper here to really season the sauce.
  • Remove the pan from the heat. Stir in the sour cream and finely chopped fresh parsley. It's crucial to add sour cream off the heat to prevent it from curdling, ensuring a silky, smooth sauce. Taste and adjust seasonings one last time if necessary. Serve the hearty stroganoff immediately over the cooked al dente egg noodles, garnishing with additional fresh parsley if desired.
