  • 6 large jalapenos (halved lengthwise and seeds removed)
  • 4 oz cream cheese (softened)
  • 14 slices bacon (thin-cut for better crisping)
  • 1/2 cup sharp cheddar cheese (shredded)
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

For the garnish

  • 1/2 cup ranch dressing
  • 1 tablespoon fresh chives (finely chopped)

Instructions
 

  • Slice each jalapeño lengthwise and carefully remove the seeds and membranes using a small spoon or knife—this is where most of the heat lives, so removing them thoroughly makes these poppers more approachable. While you're working, combine the softened cream cheese, shredded cheddar, garlic powder, and smoked paprika in a small bowl and mix until smooth. I like to taste the filling at this point and adjust the seasoning if needed; sometimes I add a tiny pinch of salt to brighten the flavors.
  • Spoon the cheese filling from Step 1 generously into each jalapeño half, filling them so they're plump but not overflowing. Take one slice of bacon and wrap it tightly around each filled pepper half, tucking and securing the bacon ends underneath so they don't unravel during cooking. I find that thin-cut bacon works best here because it crisps up quickly without charring the cheese before it melts.
  • Arrange the wrapped jalapeños seam-side down in your air fryer basket in a single layer—they should fit without overlapping. Air fry at 370°F for 15 minutes, which gives the cheese time to melt and the bacon to begin crisping. Then increase the heat to 400°F and cook for 3-4 minutes more to finish crisping the bacon and get it to that ideal golden-brown texture.
  • Remove the poppers from the air fryer and let them rest for 2-3 minutes before serving—this gives the cheese a moment to set so it doesn't ooze everywhere. Mix the fresh chives into the ranch dressing, then serve the poppers immediately with this herbed ranch for dipping.
