Ingredients
  

For the roasted vegetables::

  • 1 red bell pepper (cut into 1/2-inch pieces)
  • 1 green bell pepper (cut into 1/2-inch pieces)
  • 8 oz cherry tomatoes (halved)
  • 1/3 cup olive oil (I recommend California Olive Ranch extra virgin)
  • 1.5 tsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper

For the salad::

  • 2 cups quinoa (cooked according to package directions)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1 tsp lemon zest

For the garnish (optional):

  • fresh parsley (chopped)

Instructions
 

  • Begin by cooking the quinoa according to package directions—this typically takes 15-20 minutes and can happen while you prep and roast the vegetables. While the quinoa cooks, prepare all your vegetables: cut the zucchini into 1/2-inch pieces, cut both bell peppers into 1/2-inch pieces, and halve the cherry tomatoes. Pit and halve the Kalamata olives, and chop fresh parsley for garnish. Having everything prepped and ready (mise en place) will make assembly quick and stress-free once the roasting is complete.
  • Preheat your oven to 400°F. On a large baking sheet, combine the cut zucchini, bell peppers, and cherry tomatoes. Drizzle with olive oil and sprinkle evenly with Italian seasoning, salt, and black pepper, tossing everything together so the vegetables are well coated. Spread them in a single layer and roast for 30 minutes, stirring halfway through if needed. I like to use a shallow baking sheet so the vegetables caramelize nicely rather than steam—this gives them better flavor and texture.
  • Remove the roasted vegetables from the oven and let them cool for a few minutes—this prevents them from wilting the quinoa with excess heat. Transfer the cooled roasted vegetables to a large serving bowl, then add the cooked quinoa from Step 1 and the prepared Kalamata olives from Step 1. Toss everything together gently but thoroughly to combine. Taste the salad and adjust seasoning with additional salt if needed—Mediterranean flavors can handle bold seasoning, so don't be shy. I find the salad tastes even better after sitting for 10-15 minutes, as the flavors meld together beautifully.
  • Transfer the salad to a serving platter or individual bowls. Sprinkle the lemon zest over the top followed by the chopped fresh parsley. Serve immediately at room temperature, or cover and refrigerate until ready to serve—this salad is excellent served cool or at room temperature.
