Peel, core, and slice the apples into even pieces. Taking the time to cut the apples into similar sizes ensures they cook evenly and break down properly during the slow cooking process.
Place the prepared apple slices into the slow cooker. Add in the brown sugar, ground cinnamon, ground nutmeg, ground cloves, and salt. Stir the mixture thoroughly so that all the apple pieces are evenly coated with the sugar and spices. I like to give the apples a good mix at this point to really infuse them with those warming spice flavors.
Cover the slow cooker and cook on HIGH for 5 hours or on LOW for 8-10 hours. During cooking, the apples will become very soft and release their juices. You do not need to stir during cooking, just let the slow cooker do the work.
Once the apples have finished cooking, carefully transfer the soft apples and any liquid from the slow cooker into a blender. Cover with the lid and place a towel on top (to prevent burns in case the lid comes loose). Hold the lid securely and blend for about a minute, until the mixture is completely smooth. Alternatively, you can use an immersion blender directly in the slow cooker for convenience and less cleanup.
