Ingredients
  

  • 4 lb assorted eating apples, chopped
  • 1/2 cup packed brown sugar
  • 4 sticks cinnamon
  • 1 tsp ground allspice
  • 1 tsp whole cloves
  • 1 orange, diced
  • 2 qt water

Instructions
 

  • Add the chopped apples, packed brown sugar, cinnamon sticks, ground allspice, whole cloves, diced orange, and water to the crock pot. Stir gently to mix everything together. Cover the crock pot and set it to low. Let the mixture cook for about 6 hours, until the apples are very soft and the flavors are well combined.
  • After 6 hours, check that the apples are very soft. Using a potato masher, thoroughly mash the entire contents of the crock pot, breaking up the apples and orange into a pulp. This helps release more flavor and juice into the cider.
  • Working carefully, squeeze out as much juice as possible from the mashed apples and orange. You can do this using the back of a spoon, a potato masher, or a cheesecloth if you have one. I like to use a fine mesh strainer lined with cheesecloth for the clearest cider.
  • Scoop out the remaining fruit and discard or compost it. Carefully pour the cider through a fine mesh sieve or sleeve into a large pitcher or container. This will remove any last bits of pulp and spices to give you a smooth, clear cider.
  • Enjoy the apple cider immediately while it's warm, or let it cool and store it in an airtight container in the refrigerator. The cider can be reheated before serving if desired.
