In an extra large mixing bowl (or two medium bowls), combine the peanut butter chocolate Cheerios, wheat Chex, stick pretzels, honey roasted peanuts, peanut butter M&M's, and miniature marshmallows. Mix them gently to evenly distribute all ingredients and set aside while you prepare the white chocolate coating.
In a microwave-safe bowl, combine the white chocolate chips and butter. Microwave on high for 1 to 2 minutes, stirring about halfway through the melting time, until the mixture is fully melted and smooth. Be sure not to overheat—the chocolate should be just melted for the best texture.
Pour the melted white chocolate mixture (from Step 2) over the dry ingredients (from Step 1). Stir gently but thoroughly so that all the cereals, pretzels, peanuts, M&M's, and marshmallows are evenly coated. This step can get a little sticky, but I like to use a silicone spatula to make sure I get every bit coated.
Spread the coated mixture onto two large baking sheets lined with wax paper. Try to separate any large clumps so the mix cools evenly and doesn’t stick together too much. Let the mixture cool at room temperature for about 10 minutes.
Once the white chocolate is set, break the mix into smaller chunks. Transfer the finished snack mix to an airtight container for storage until you’re ready to serve. I always make sure to save some in a separate container for a sweet snack stash throughout the week!
